Man Salad

This salad is so good and so filling that you can use it as a main dish. Seriously, it upstaged the ham at a dinner my sister-in-law threw one mother’s day. I got the recipe from my friend Leesa, she calls it the man salad, because even a man will eat it. I don’t even have anything else to say, seriously, it is just that good. Try it, you will love it

Man Salad

PRINTABLE RECIPE

Salad-

1 head of lettuce

12 oz bag of spinach

½ cup crumbled feta cheese

14 slices of bacon or ½ cup precooked bacon pieces*

1 sm red onion

½ cup dried cranberries*

1 cup candied almond slices

Dressing-

1 tsp salt

½ tsp prepared yellow mustard

¼ tsp onion powder

2/3 cup sugar plus 2 TBL

1 TBL poppy seeds

1 cups oil

1/2 cup vinegar*

Stir together dry ingredients until well mixed. Mix together oil and vinegar. Combine wet and dry ingredients and shake or whisk until well mixed and sugar dissolved.

Candied almonds-

1 cup almond slices

1/3 cup sugar

Heat together in a pan stirring constantly on high heat until sugar melts and almonds are brown.

*For the bacon I usually use pre-cooked bacon bits that I get at Costco, real bacon without the mess, LOVE.

For the vinegar I use either red or white wine vinegar; use your favorite.

It is also really good with fresh strawberry slices in place of the dried cranberries

I have made this very simple before too, plain sliced almonds, no onion, just lettuce. It is still good but with everything it is amazing. This is really easy to make for those with special dietary needs. Leave out the feta cheese and it is corn free, dairy free, and gluten-free; as always check labels of everything that you are using in any recipe to make sure.
